Bacon Apple Shaved Brussels Sprout Salad

Bacon Apple Shaved Brussels Sprout Salad

INGREDIENTS:
For The Salad
- 1 lb. raw brussels sprouts
- 1 cup chopped kale
- 1 small honeycrisp apple cut into small cubes
- 1/2 cup chopped walnuts
- 1/3 cup dried cranberries
- 1/2 cup crumbled goat cheese
- 5 slices cooked bacon
For The Dressing
- 1/2 cup extra virgin olive oil
- 1 tbsp. apple cider vinegar
- 1 tbsp. honey
- 1 tbsp. apple juice
- Juice of 1/2 a lemon (or 2 tbsp.)
- 2 cloves minced garlic
- 1/2 of a minced shallot (or 1 tbsp. minced yellow onion)
- Salt and pepper to taste
DIRECTIONS:
- Using a box grater or a food processor, shave the brussels sprouts into small pieces.
- Combine all the the salad ingredients in a large bowl.
- Combine all dressing ingredients in a sealable Tupperware or mason jar. Shake vigorously for about 45 seconds or until all of the ingredients have emulsified. (You can tell everything is emulsified when the oil does not separate out from the other ingredients.)
- Toss salad together with the dressing and enjoy!

WHY IT WORKS:
- Cava is the thrifty little brother of champagne. It is from Spain instead of France, and it often has a lot of the same refreshing bright notes as champagne, without the price point that brings a slight tear to your eye.
- It typically has notes of lemon, apple, brioche and could have honey and spices. It also has bright acidity and most importantly- bubbles!
- The lemon and apple notes in this wine mimic the bright flavor of lemon in the dressing and the apple tossed throughout the salad. The bright acidity and bubbles also help to cut through the salt and fat that the bacon brings to this party.
- When in doubt- pair everything with bubbles. It is the golden rule of pairing.
