Instant Pot Coconut Lime Rice
This is like the swanky, dressed up older sister of regular white rice. She looks similar, but the creamy coconut, zip of lime and toasty almonds just won't let plain white rice have her moment. Don't be jealous, white rice. You still have a great personality.
Instant Pot Coconut Lime Rice
Active Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
- 3 cups jasmine rice, rinsed until water is clear
- 1 (13.5 oz.) can full fat coconut milk
- 1 1/4 cups low sodium chicken stock
- Zest of one lime
- Juice of 1/2 of a lime
- 1 tbsp. extra virgin olive oil
- 1/2 cup slivered almonds
Combine the rice, coconut milk, chicken stock, lime zest and lime juice in the Instant Pot and stir to combine.
Seal the lid and set the Instant Pot to pressure cook for 5 minutes.
Meanwhile, heat olive oil in a pan over medium-low heat. Once the olive oil is warmed, add the almond slivers to the pan and cook, stirring occasionally, until the almonds are toasted (about 5 minutes.)
Once the cooking time is complete on the Instant Pot, quick release the pressure according to the manufacturer’s directions. Fluff the rice with a fork. Top with the toasted almonds and additional lime zest if desired and serve it up! I recommend using this as a side dish to Asian inspired main dishes.

WHY IT WORKS:
- This wine has notes of strawberry, raspberry and citrus. It is off dry, which means that it has does not have much residual sugar.
- This is great for pairing because it has nice acidity, but is not overpowering in flavor. This allows it to compliment a wide variety of different foods.
- I like this wine with the coconut lime rice because it picks up the bright lime flavor in the rice. I also often use this recipe as a side dish for Asian inspired dishes and this wine usually pairs nicely with that style of cuisine.
