Instant Pot Tacos Al Pastor
Ok, I have a confession. I think tacos are one of the most overrated foods. The tortilla to insides ratio is never right and I end up slopping them all over myself and leaving the whole situation feeling like a common swine. HOWEVER, these tacos are worth the slopping. They are really freaking good.
Instant Pot Tacos Al Pastor
Active Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
- 5 lbs. boneless pork shoulder roast
- 6 oz. Corona beer
- 2 chipotles in adobo
- 4 cloves garlic
- 1 fresh pineapple, peeled, cored and roughly chopped
- 1/2 of a white onion
- 3 tbsp. chili powder
- Juice of 1 lime
- 2 tbsp. white vinegar
- 2 tbsp. Kosher salt
- 1 tsp. ground cumin
- 1 tsp. oregano
- 1/2 tsp. ground cinnamon
- 2 tbsp. fresh cilantro
Optional garnishes: Chopped pineapple, chopped white onion, feta cheese, cilantro, lime juice.
Cut the pork into 2 inch chunks. Season generously with salt. Add pork to the bowl of the Instant Pot.
Add the chipotles in adobo, garlic, 3/4 of the pineapple (use the rest for topping,) white onion, chili powder, lime juice, vinegar, salt, cumin, oregano, cinnamon and cilantro to a food processor. Blend until smooth (about 1 minute.) Pour mixture into the Instant Pot. Add beer to the Instant Pot and stir everything to combine.
Set the Instant Pot to pressure cook and set the timer for 40 minutes. Meanwhile, preheat the oven to broil. When the pork in the Instant Pot is finished cooking, quick release pressure according to manufacturer's directions. Take the pork out of the Instant Pot and shred. Place the shredded pork on a sheet pan, top with a little bit of the leftover juices from the Instant Pot, and broil in the oven for 3-4 minutes or until the pork has some crispy bits.
Serve pork on corn tortillas and top with additional chopped pineapple, onion, feta cheese and cilantro.

- This wine is high in acidity and has just a very slight zip of bubbles. It has notes of green apple, lemon and lime.
- This wine pairs well with these tacos because the light refreshing wine compliments the acidity of the pineapple and lime juice that are topping the tacos.
