Summer Strawberry & Grilled Chicken Salad
Not to sound dramatic, but every time I make this salad, I literally can't stop thinking about it for days. It's like I get a salad crush. Is it weird to get a crush on arugula? ? Probably. Once you try this salad on the patio with the sun shining and you've cracked into a crisp bottle of rosé, you'll understand. You'll have a salad crush too.
Summer Strawberry & Grilled Chicken Salad

INGREDIENTS:
For The Salad
- 4 cups arugula/spinach mix
- 5 strawberries, chopped
- 1 mini seedless cucumber, chopped
- 1/2 small yellow onion
- 1/3 cup chopped pecans
- 1 1/2 cup grilled chicken (I recommend using my recipe for sweet soy grilled chicken)
- 1/2 cup crumbled blue cheese
- 1/2 of an avocado, chopped
For The Dressing
- 1/4 cup extra virgin olive oil
- 1 tbsp. vegetable oil
- 1 tbsp. honey
- 1 tbsp. lemon juice
- 1 tbsp. apple cider vinegar
- 1 tsp. dijon mustard
- 2 cloves minced garlic
- Salt and pepper to taste
DIRECTIONS:
Toss all salad ingredients together in a large bowl.
Combine all dressing ingredients in a sealable Tupperware or mason jar. Shake vigorously for about 45 seconds or until all of the ingredients have emulsified. (You can tell everything is emulsified when the oil does not separate from the other ingredients.)
Toss salad together with the dressing and enjoy!
Pinot Noir Rosé

WHY IT WORKS:
- This rosé is made from pinot noir grapes and comes from Oregon, which is a very well known pinot noir region in the U.S.
- This wine has notes of strawberry, raspberry, citrus and pear. It is off dry, which means that it has does not have much residual sugar.
- This is great for pairing because it has quite a lot of acidity but is not overpowering in flavor. It does have nice depth, which allows it to compliment a wide variety of different foods.
- I love this wine with the strawberry & grilled chicken salad because the depth of the wine compliments the sweet glaze of the chicken and smokiness of the grill. The wine is also still bright and crisp, and the strawberry notes compliment the fresh strawberries in the salad.
